I have got a map in The Battle of France 1940 by Goutard that shows Group von Kleist advancing to the Seine at Romilly with 16 Panzer Korps heading off to Troyes but nothing regarding Arcis sur Aube.
There doesn't have to have been an engagement there. Some of the worst damaged towns were not actually fought over. A significant bridge would have been enough to make it a target for the Luftwaffe Possible French troop movements or sadly enough simply a refugee column would have been enough to flatten the place.
